Grapes are an important cash crop throughout the world. The berries stand out for their bright color, juicy flavor, and high nutrient content, and they are rich in vitamins, anthocyanins, carotenoids, and several antioxidant compounds, which are substances that can effectively remove free radicals and delay senility in the body [89,90].
In a practical use of jabuticaba seeds, Baldin et al.  evaluated the antioxidant and antimicrobial activity of the microencapsulated aqueous extract of jabuticaba residues (bark and seeds) used as dyes in the manufacture of mortadella. The addition of the extract provided better sensory acceptance, and did not interfere with the chemical composition, lipid oxidation, and bacterial development. According to the authors, the addition of natural extracts is promising and represents great potential for application during the manufacture of products enriched with natural antioxidants.
